I really like based.cooking, but I stopped eating meat and it's somewhat difficult to filter out the meat dishes. grimgrains is cute and vegan. clove garden mogs all these, though.

maybe the real based cooking was clove garden all along?

I should probably compile all my favorite recipes somewhere. In the meantime:

Every bread recipe freaks out about weighing to the gram and kneading with the right timing but none of that matters. Yeast can't be reasoned with - you gotta get in tune with it.

Here's some (no-knead) bread intuition:

  • 2 cups whole wheat flour
  • 2 cups all purpose flour
  • 2 teaspoon salt
  • 2 cups warmish water, more if the dough is too crumbly
  • 1-2 teaspoon yeast
  • Honey, if you'd like
  • Oats, if you'd like. Reduce flour if you add more than like half a cup

Mix these up in a bowl, and let it sit covered overnight. When you're ready to bake, take the dough out of the bowl and plop it on the counter.

I preheat the oven to 475 while the dough sits. I use a dutch oven, and bake the dough for about 30-40 minutes with the lid on. I take the lid off and keep baking until it looks good.

The enter, backspace, backslash, bracket, and half the function keys broke freshman year. I finished my CS program without pressing enter or backspace for 3.5 years of the degree. The screen ascended shortly after I graduated, and I've decided that it's a good way for a computer to look.
